Yes, you need the Takahashi mount plate sold separately. I have been using this with my Esprit 80 successfully.

Check the product page for EAF. ZWO only sell one Takahashi bracket (sorry, not mount plate) and that's the one you need.
You can use the standard EAF bracket with the Esprit 80. See the image below. The Takahashi bracket may be better, but I've been using it this way for a year with no issues.
alastroct my esprit has two holes on the focuser unlike yours, no need for aftermarket and its not wobbly hm
Yes that is possible as well but for me that wasn't properly fixed and the bracket was wobbling so I used the other bracket instead.

I would if I could. Unfortunately my telescope is at my home in Chile and I am in Spain at the moment at least until January 2021. Sorry. It is something like this though

There is an allen screw inside the focuser knob that you need to loosen. Remove the one that does not have the fine adjustment as well.
