After making a few .AVI videos I tried to look at them using VLC Media Player. VLC did not like them. It just ran through them without displaying anything. Windows Media Player did display them but when I zoomed in a little I noticed the distinct view of what was most likely a Bayer pattern. So I ran some through PIPP to see what I would get, but that did not help. I came across a post here indicating the Bayer pattern in the video files has to be processed as "GRBG" not "RGGB". Once I did that I got good results and the resulting .AVI file generated by PIPP was displayed properly in VLC. ZWO needs to hire some people to do documentation as this does not appear anywhere that I could find. Fortunately someone in the forum here ran into this and was able to come up with a solution.
