Another update. Last night, I spent 3 hours imaging. Nothing different in my setup, EXCEPT I decided to check the boxes to once again use the flat, dark, and bias calibration frames. Lo and behold, I imaged several targets for a duration of 20 minutes each and stacked 95-100 subs in each stack. No slowdowns whatsoever.
This morning I checked my iPad and it had updated to IPad OS 15.6.1 since my late August sessions. It's possible the stacking slowdown issue I experienced is tied to iPadOS 15.6 and the 15.6.1 has corrected it. Looking through Apple's release notes I found they made some iPadOS updates relating to image processing:
