The only true "color" sensor is the Foveon one. All other "color" sensors do not collect full color information at all the photo-sites.
Instead, there is a layer of tiny RGB filters over the sensor. You then synthesize the final color image from it (albeit at lower resolution). The process was invented by Bryce Bayer of Kodak. So, the filter layer is often called "Bayer filter array" or "color filter array," and the process of synthesizing a full color image from the array is known as "debayering."
