Yes, the pixel size remains the same. When you choose a smaller ROI, the camera simply transfer the pixels from a smaller subimage (same center as the center of the full frame) to the ASIAIR.
If you want fewer pixels but the same sensor area, just use binning. In that case, your effective pixels do become larger.
