If one bolt is bent and you can't bend it the opposite direction in order to back it out you'll likely have to drill it out. Bolts are normally steel so not easily to distort in such small sizes and spaces, if there's some length on the outside you can also try bending it with a length of metal tube, the longer the tube the more torque you can apply but note, any method will likely cause more damage to the saddle as the machined parts are likely made of aluminium which is very soft in comparison to steel.
