Does the ASI2600 Pro use the Sony IMX571BQR-C or the Sony IMX571BQR-J? As I understand it the C is a consumer version and the J is an industrial version. Also could you comment on the reasons for selecting one or the other?

It’s the consumer version. It was stated here in the forums by ZWO tech a while back when it came out.

Chips are usually graded as Commercial (lowest grade), Industrial, and Military Grade. In addition, the Military Grades can also be Space Qualified (better alpha particle survival, etc).
