The SharpStar mount uses the OnStep protocol. Check your mount's documentation -- it has a detailed desciption of how to connect to ASIAIR, using the "OnStep beta" mount selection.
Since your mount does not come with GPS, make sure you follow the manual on setting up the Latitude and Longitude through ASIAIR.
is it possible to operate the ASIair Plus through a MacBook Pro wirelessly
Nope.
But if your MacBook Pro has the M1 or M2 chip, there is a chance that ASIAIR v2.0.0 will run on it, when that version is released. However, some GUI elements will be suboptimal because you have to use the mouse. "Pinch Zoom" is not as natural, for example.
You can also connect the ASIAIR to an iPad, and then use macOS/iOS Universal Controls to control the ASIAIR.
