Paul: How are you obtaining the ambient temperature from the camera? The camera should return the sensor temperature, and not the ambient temperature.
There is a set point to set the sensor temperature, and a readout of the actual temperature of the sensor.
The set point is not a ∆, it is the target temperature that you wish the sensor will be placed at. If you set it for -5ºC, the camera will try to maintain that sensor temperature automatically, irrespective of the ambient temperature. The actual temperature that you can read back, will usually track the target temperature (once it reaches it) to within a couple of ºC.
