Why do all my videos look like they were shot through a screen door. after stacking the JPEG file looks the same. I need to learn how to use Fire Capture.

Looks like something wrong during stack, check the raw video first, if the video looks fine. The problem on the second image may caused by the wrong bayer pattern, change to other bayer pattern to try.
